Instructions
For this recipe you can replace common flour with oat flour, and you can use garlic paste or powder.
Wash and grate the zucchini. Use the side with the largest holes.
Drain with a clean kitchen cloth to eliminate the extra liquid it may have.
Put the eggs, garlic paste, flour and some herbs (scallion, cilantro, parsley, etc.) in a bow. Add salt and pepper and mix well until integrating.
Heat a pan over medium-high heat and once heated, pour the oil and spread.
Use a spoon to add the mixture and smash shaping the fritters.
Cook each side over medium heat for about 3 minutes. Once you flip them, cover the pan to achieve an even cooking or until brown.
At the same time, you can make the garlic sauce: Put the entire garlic (without peeling) in a pan over low heat. Cover and let cook each side for 3-5 minutes until browned.
Peel the garlic and smash using a fork. Mix with the plain yogurt and lemon juice until obtaining a sauce. Add salt and pepper.
Serve the zucchini fritters on a plate with the garlic sauce on the side.
