Clean the cauliflower, remove the stalks and grate.
Place in a microwave-safe container and cook at maximum temperature for 5 minutes until tender.
Meanwhile, chop the mozzarella cheese, cut the tomato in half and the bell pepper into strips.
Once the cauliflower is done, chop and transfer to a clean kitchen towel and drain to remove as much water as possible.
Next, mix with the egg white and half of the mozzarella cheese. Season with salt and pepper.
Place on a parchment paper lined baking pan.
Bake in a preheated oven at 356 °F (180 °C) for 10 minutes to cook the dough.
Once the dough is browned, spread the oil, add the garlic and the remaining cheese.
Add the tomato, bell pepper and a pinch of salt. Bake again in the oven for approximately 10 minutes.
Remove, garnish with some fresh basil leaves and serve hot.
