Set aside some raspberries for decoration and 1/3 of the chia for the jam.
Mix the almond milk, 2/3 of the chia, vanilla extract and the stevia in a bowl. Let stand 5 minutes.
Place the remaining raspberries in a microwave-safe bowl and heat for 1 to 3 minutes until they burst. Alternatively, cook in a pot on the stove.
Mash with a fork to release the juice and add the remaining chia and stevia. Mix and place in a glass.
Let stand for 10 minutes, add the almond milk mixture.
