Heat half of the oil in a pan over high heat. While heating, cut the chicken into bite-size pieces and season with salt and pepper.
Once heated, add the chicken and brown on all sides over medium heat. This will take 3-4 minutes.
In the meantime, cut the bell pepper and onion into strips and the green beans into chunks.
You can use red, green and/or yellow bell pepper as desired.
When the chicken has slightly browned, add the rest of the oil along with the rest of the vegetables. Stir-fry for 5 minutes over medium heat.
Continue for 5 minutes over medium heat until the onion is translucent, and the green beans are soft. If desired, you can add chopped basil.
Cover and continue cooking for about 2-3 minutes until the vegetables are tender.
When desired doneness is reached, remove and serve hot.
