Season the chicken with half the oil, oregano and salt and pepper to taste.
Heat a pan over high heat. Once heated, add the chicken and cook each side for 4 minutes over medium heat. Cover once you flip it.
At the same time, chop the garlic and slice the mushrooms. Cut the tomato or, if you use cherry, cut in half.
Heat the remaining oil in a pan over medium heat.
Once heated, add the garlic and mushrooms and stir-fry for 3 minutes. Remove and set aside.
Next, in the same pan, add the tomato, scallion and salt and pepper to taste. Cook for 5-7 more minutes and remove from heat.
Turn off and add the mushroom again. Mix well.
Serve the chicken with stir-fried mushrooms, tomato and parsley on a plate.
