Instructions
For this recipe you need chicken/vegetable broth or water. The amount to be used will be double and half the specified amount of rice.
Heat the oil over medium heat in a pot. While heating, chop the onion.
Once the oil is heated, add the onion with a pinch of salt and stir-fry over medium heat for 5 minutes or until translucent.
Add the corn along with the rice and stir until everything is covered by a light layer of oil. This will help seal the starch and prevent the rice from becoming sticky.
Add the vegetable broth, stir and cook over low heat without covering, stirring from time to time.
When almost all the liquid has evaporated, cover and cook over low heat for 5 more minutes.
Uncover, stir from the bottom upwards and if the rice is not cooked, cover again and leave it cooking for 5 more minutes.
Remove from heat, serve and garnish with some chopped parsley.
