For this recipe you can use artichoke hearts or the bottom part.
You can use canned or fresh artichokes.
If you use fresh ones, spray with lemon juice so they don't rust.
Put them in a pot with water and a pinch of salt. Boil for 15 minutes or until soft. Drain and let cool.
Remove the inner part of the artichoke using a spoon, chop and set aside.
At the same time, peel the carrot and dice. Chop the onion.
Heat oil in a pan over medium heat. Once heated, add the onion, carrot and peas.
Add salt and pepper and stir-fry for 2 minutes, cover and let cook for 6-8 minutes until soft.
Add the filling to the bottom part of the artichoke or add the chopped artichoke heart and mix. Add salt and pepper to taste.
Serve the stuffed artichokes and add with some lemon juice if desired.
