Instructions
Wash the quinoa, chop the onion and peel the carrot with the garlic. Slice the carrot.
Heat the oil in a pot. Once heated, add the onion with the garlic, carrot, salt and pepper to taste.

Once boiling, cover and let cook over low heat from 10-15 minutes.

Add the oats, mix and shape shape the croquettes with a whole in the middle. Add a piece of mozzarella cheese and seal the croquette.
Put the breadcrumbs and sesame seeds in a bowl. You can use white, black or both sesame seeds.
Soak all the croquettes in the breadcrumb mixture and take to the fridge for 30 minutes.
Cook in the oven or air fryer for 10 minutes over 356 °F (180 °C) until browned.
