Preheat a pan over medium heat.
While heating, mince the garlic and chop the tomatoes. You can use cherry tomatoes.
Once heated, add half of the oil, garlic and tomatoes.
Stir-fry for 3 minutes, then add the spinach.
Mix well, cover and cook for 1-2 more minutes or until the spinach has reduced in volume.
Once the spinach has reduced in size, remove and set aside.
Then add the remaining oil and crack the eggs into the same pan. Cook for about 3-5 minutes or until the egg whites set.
Season with salt and pepper to taste and serve.
