Preheat the oven to 356 °F (180 °C).
For the dough, mix the flour, water, salt and 2/3 of the olive oil. Knead for about 10 minutes and shape it into a ball.
On a clean, flat surface, sprinkle a little flour and roll out with a rolling pin to the desired thickness. It can be round, square or rectangular.
Take to the oven for 15 minutes.
Chop the onion and 2/3 of the specified amount of tomato. Slice the rest of the tomato and set aside.
In a pot, heat the remaining oil and add the tomato, onion, garlic and a pinch of salt. Stir-fry for 5 minutes or until softened.
Next, blend this last mixture and return it to the pot, turn on the heat and let it cook until lightly boiling.
Remove the pizza dough, dip it in the tomato sauce, add the diced cheese and add the basil leaves along with the tomato slices set aside.
Bake in the oven again for 15-20 minutes or until it is completely melted.
