In a bowl, mix half the oil, lemon juice, lemon zest, thyme, salt and pepper. If desired, place the chicken in the marinade for at least 10 minutes.
Heat a pan over medium-high heat. Add the marinated chicken and cook for about 4-5 minutes on each side.
Once done, remove and set aside.
Add the remaining oil to the pan.
In the meantime, cut the tomato into pieces. You can use cherry tomatoes instead.
Once heated, add to the pan and salt and pepper to taste.
Sauté for 4-5 minutes until softened.
Serve with the chicken.
