In a bowl, mix half the oil, lemon juice, lemon zest, thyme, salt and pepper. If desired, place the turkey in the marinade for at least 10 minutes.
Heat a pan over medium-high heat. Add the marinated turkey and cook for about 4-5 minutes on each side.
Once done, remove and set aside.
Add the remaining oil to the pan.
In the meantime, slice the zucchini.
Once heated, add to the pan and salt and pepper to taste.
Sauté for 4-5 minutes until softened.
Serve with the turkey.
