For this recipe you need cooked beets and lentils.
Add rolled oats to a blender until you have a powdery flour. You can also use quick oats or oat flour.
Next, preheat half of the oil in a pan over medium-high heat. In the meantime, chop the onion.
Once heated, add the onion to the pan with a pinch of salt and stir-fry for 3-5 minutes over medium heat.
When the onion takes on a transparent color, turn off and set aside. You can add chopped parsley.
Place the cooked lentils in a bowl and mash until obtain a paste. You can also use a hand blender.
Add the stir-fry together with the oats and season with salt and pepper to taste. You can add garlic powder, curry, paprika, etc.
Once done, shape into patties and cook in a preheated pan with the rest of oil. Brown them on both sides and remove from heat.
Meanwhile, peel the avocado and cut into wedges together with the tomato. Next, cut the leafy greens. You can also use arugula or lettuce.
Serve all the ingredients in a bowl and season with lemon juice, salt and pepper to taste.
