Once the oil is hot, add the garlic, onion and a pinch of salt.
Stir-fry for 3-5 minutes and add the mushrooms. Then, remove and set aside.
Crack the eggs into a bowl and add a pinch of salt. Beat and add the cooked vegetables with the parsley.
Heat the remaining oil. Once heated, pour the mixture.
Cover and cook until set, approximately 4 minutes.
Carefully flip the omelet using a spatula, lower the heat and cook for 1-2 more minutes.
Serve.
