Instructions
In a large pot, heat 3 tbsp of ghee or oil and add 250g of beef shank or stew meat, browned on all sides.
Add 1 tbsp of ginger paste and 1 tbsp of garlic paste, and sauté for a minute.
Stir in 2 tbsp of Nihari masala mix and cook for another minute.
Pour in 4 cups of water, bring to a boil, then reduce the heat to low, cover, and simmer for at least 4-6 hours, or until the meat is extremely tender.
In a small bowl, make a slurry by mixing 2 tbsp of all-purpose flour with 1/4 cup of water.
Slowly whisk the slurry into the stew to thicken the gravy.
Simmer for another 15-20 minutes until the gravy has thickened to your desired consistency.
Garnish with julienned ginger, chopped green chilies, and fresh coriander leaves.
Serve hot with naan bread.
