Use a non-stick pan and preheat over medium heat. If you do not have this type of pan, add some oil.
Once heated, pour 1/3 of the mixture.
Once the bottom of the pancake has set, flip it over and let it cook completely. Repeat the process until the mixture is finished.
For the coulis, in a microwave-safe bowl place the blueberries along with the stevia. You can replace it with the sweetener of your choice.
Cook for 2-3 minutes at maximum temperature. Mix the sauce with a fork.
If you do not have a microwave, bring to medium-low heat with just a little water and cook for approximately 5 minutes until melted.
Serve the pancakes with blueberry coulis.
