Instructions
Put the peas in a pot with boiling water for 6 minutes.
Once blanched, remove and drain.
Whisk the eggs with half the peas in a bowl and add salt and pepper. If you want, you can add onion, garlic and paprika powder.
Heat oil in a small pan.
Once heated, pour the mixture and cook over medium heat for 4-5 with the pan covered.

Cook for 4 minutes more until brown and remove from heat.
Serve the omelet hot on a plate with the remaining peas on the side.
