Put them in a bowl and add salt to taste, garlic powder (optional) and 1/3 of olive oil. Mix well.
Put them in an air fryer trying to not put one on top of the other. Cook over 356 °F (180 °C) for 8-10 minutes until browned.
For the dip, chop the leaves along with the garlic.
Take the vegetables previously chopped to the blender and add half of the remaining oil. Blitz.
Add the Greek yogurt with the vegetables previously blended. Mix well.
Add the lemon juice and mix well.
Season with salt, thyme, oregano to taste and the remaining oil. Mix well.
Serve the chips with the yogurt dip.
