Wash, peel and dice the potato.
Boil water with a little salt and add the potato once boiling.
Cook the potatoes for about 10-12 minutes and remove before they are too soft. Stop cooking with cold water and drain well.
Add the green beans cut into thirds to the same pot with boiling water. Boil for 6 minutes, remove, stop cooking with cold water and drain.
In the meantime, slice the radish cut the fresh cheese into pieces.
Make the dressing by mixing mayonnaise, olive oil, lemon juice and salt and pepper to taste.
In a bowl place the potatoes, radish, fresh cheese and spinach leaves. Mix well with the dressing and serve cold.
