For this recipe you need cooked quinoa and potato.
Mash the cooked potato.
In a bowl place the quinoa, mashed potato and grated cheese.
Add the beaten egg, 2/3 of the breadcrumbs, chopped parsley and salt and pepper.
Mix well until all the ingredients are combined, and you have a dough.
Shape into three balls and coat them in the remaining breadcrumbs.
Bake in a preheated oven at 356 °F (180 °C) for 20 minutes. If using an air fryer, cook for 15 minutes.
Remove and serve.
