For this recipe you need cooked rice.
Put the rice, eggs, half the chopped scallion and a pinch of salt in a bowl.
Mix well. Add more scallion if desired.
Heat a pan over medium-high heat and once heated, pour the oil and spread.
Use a spoon to add the mixture and flatten shaping the fritters.
Cook each side over medium heat for about 3 minutes. Once you flip them, cover the pan to achieve an even cooking or until browned.
At the same time, you can make the Asian style sauce. Mix the soy sauce, oyster sauce, honey and remaining chopped scallion. Optional: Add a pinch of sesame seeds.
