    Chop the onion and cilantro. Set aside to add later. Tie the remaining cilantro and scallion using a kitchen string.

    Wash the short ribs and remove excess fat. Place in a pot with 2 cups of water, the whole garlic and the tied cilantro and scallion. Add the cumin.

    Place the pot over high heat and once boiling, cover and let it cook for 40 minutes over medium heat.

    Next, verify that the short ribs are tender. Remove the cilantro and garlic.

    Add the onion and cilantro previously set aside. Also add the potato, previously peeled and cut in not very small pieces. Add salt and pepper to taste.
