Pour one tablespoon of soy sauce for better flavor. Let cook for 10 minutes until it duplicates its size.
In the meantime, chop the onion and heat a pan over high heat. Once heated, put half the oil and spread.
Put the onion, add salt and pepper to taste and stir-fry for 3-5 minutes over medium heat until the onion is translucent. Turn off.
Once ready, pour the textured soy protein in the pan and let cook for 10-12 minutes while stirring from time to time. Season with salt and pepper.
In the meantime, cut the cucumber and tomato and lettuce leaves into small pieces.
For the dressing: mix the remaining olive oil, lemon juice and salt and pepper.
Serve the textured soy protein and salad. Mix with the dressing.
