For this recipe you need cooked lentils.
Shell the corn and place in a pot with boiling water and a pinch of salt. Boil for 12-15 minutes and remove.
Add rolled oats to a blender until you have a powdery flour. You can also use quick oats or oat flour.
Next, preheat half of the oil in a pan over medium-high heat. In the meantime, chop the onion.
Once heated, add the onion to the pan with a pinch of salt and stir-fry for 3-5 minutes over medium heat.
When the onion takes on a transparent color, turn off and set aside. You can add chopped parsley.
Place the cooked lentils in a bowl and mash until obtain a paste. You can also use a hand blender.
Add the stir-fry together with the oats and season with salt and pepper to taste. You can add garlic powder, curry, paprika, etc.
Once done, shape into patties and cook in a preheated pan with 1/3 of the oil. Brown them per both sides and remove from heat.
Meanwhile, cut the bread and toast in a pan over low heat on both sides. Be careful not to let it burn.
Cut the tomato with the cheese into small pieces and mix with the corn. If you wish, you can add lettuce, spinach or arugula.
For the dressing, mix the mustard with the remaining oil, lemon juice, stevia, salt and pepper to taste.
Serve the salad with the lentil patties and pour the dressing.
