For this recipe, you can use light or dark soy sauce.
Drain and dice the tofu.
Cut the broccoli in small sprigs, put in a boiling water pot and let boil for 3 minutes. Drain.
At the same time, heat half the oil in a pan over high heat. Once heated add the tofu, lower the heat to medium and sear. Set aside.
Cut the carrot in really thin strips, cut the bottom of the asparagus and the cabbage into strips. You can replace the latter with pak choy or bok choy.
In the same pan, add the remaining oil and once heated again, add the vegetables. Stir-fry for 7-8 minutes until soft.
For the sauce: In a bowl mix the soy sauce, shredded ginger, ground chili and stevia. Remember you can replace the stevia with your favorite sweetener.
Add the tofu, broccoli and prepared sauce. Stir, add salt and pepper to taste and let cook for 5 minutes over medium heat.
Remove and serve the sweet tofu with sauteed vegetables hot.
