For this recipe you need cooked rice.
Make a cross cut at the top of the tomato of only a finger deep.
Put the tomato in a pot with boiling water and let boil for 5 minutes. Next, remove and set aside.
Heat half the oil in a grill over medium heat while you drain and dice the tofu.
Once heated, add the tofu and cook each side for 3-4 minutes or until browned. Remove and set aside.
At the same time, heat the remaining oil in a pan over medium heat.
Once heated, add the peanut and garlic into pieces. Optional: Add some red hot chili pepper or paprika. Brown for 5 minutes while stirring from time to time and set aside.
Blend the tomato with the brown peanut and garlic. Optional: You can add some almond milk.
Blend until obtaining an even sauce. Add liquid gradually until obtaining your desired texture.
Take the sauce to the heat and cook for about 5 minutes over medium heat until it boils.
Then add the tofu and finish cooking all together.
Serve the rice with the tofu and peanut sauce on top on a plate. You can sprinkle some chopped cilantro or parsley.
