Turkey, Potato, Lettuce and Cucumber Salad with Avocado Dressing

Ingredients

• Turkey Breast150 g
• Lettuce1 cup (35 g)
• Cucumber3/4 cup (90 g)
• Oil1 teaspoon (5 ml)
• Lemon Juice1 tablespoon (15 g)
• Yogurt1/4 cup (60 g)
• Potato1/2 medium (90 g)
• Avocado1/4 count (60 g)

Instructions

   Step 1

   Cut the potato into pieces and place in boiling water for 10-12 minutes or until soft.

   Heat the oil in a pan over medium-high heat.

   In the meantime, salt and pepper the turkey.

   Once heated, sear each side for 4-5 minutes. Set aside and cut into small pieces or shred if desired.

   For the avocado dressing, mix the yogurt, mashed avocado and lemon juice. Salt and pepper to taste.

   Shred the lettuce and slice the cucumber.
