Instructions
Heat 1 tbsp of oil in a pan and add 1/2 tsp of mustard seeds, 1 tsp of urad dal, and 1 tsp of chana dal. Sauté until the dals turn golden.
Add a few curry leaves, 1 chopped green chili, and 1/2 inch of grated ginger. Sauté for a minute.
Add 1/4 cup of chopped onions and sauté until they turn translucent.
Pour 1.5 cups of water, add salt to taste, and bring it to a boil.
Slowly add 1/2 cup of roasted rava (semolina) to the boiling water, stirring continuously to avoid lumps.
Cover and cook on low heat for 2-3 minutes, or until the upma is cooked through.
Garnish with fresh coriander leaves and a squeeze of lemon juice.
Serve hot.
