Instructions
For this recipe you need to have the sweet potato previously cooked and mashed. If not, dice and boil for 10 minutes. Mash until creamy.
If you do not have oat flour to make this recipe, you can blend the oat flakes until pulverized.
In the blender cup place the cooked sweet potato and the almond milk and blitz.
Next, add the oat flour, baking soda, baking powder, 2/3 of the maple syrup, oil and cinnamon.
Blend everything until well combined.
Let the dough stand for 5 minutes until thickened.
Place a non-stick pan over medium heat to heat it. If you do not have this type of pan, spread a little oil with a paper towel.
Once heated, add 1/3 of the mixture and try not to spread too much. Cook for a few minutes and then flip over.
Leave a few more minutes and remove from heat. Place on a plate and repeat the process until the mixture is finished.
Serve the sweet potato pancakes and pour the remaining maple syrup on top.
You can replace the almond milk with another plant-based milk and the maple syrup with agave syrup.
