For the noodles: peel and remove the ends of the zucchini.
Then cut into long and thin strips. You can use a vegetable spiral slicer.
Heat half the oil in a pan and stir-fry the noodles for 6-8 minutes over medium heat.
Then heat another pan over medium heat. In the meantime, chop the garlic and cut the tomato into pieces.
Once heated, pour the remaining oil, spread and add the garlic with tomato.
Stir-fry for 3-4 minutes.
Then add the zucchini noodles and mix well for a better flavour. Add salt and pepper.
Remove from heat, add the grated cheese and the chopped spinach.
Serve hot.
