For this recipe you can use cucumber or pickles. If you use pickles, remember you need to buy the unsweetened ones.
Heat water in a pot over high heat until boiling. In the meantime, peel and cut the potato into small pieces.
Finely chop the onion and parsley.
Once boiling, add the potatoes and let boil for 10 minutes. Remove, drain and set aside.
