For this recipe you need cooked beans.
Shell the corn and boil with a pinch of salt for 10-12 minutes or until soft. Drain and set aside.
Simultaneously, place a pot over medium-high heat. While heating, cut the beef into bite-size pieces and season with salt and pepper.
Once heated, add half of the oil, spread and add the beef.
Sear the beef over medium heat for 2 to 3 minutes per side. Remove and set aside.
In the same pot, add the remaining oil along with the onion and garlic with a pinch of salt.
Stir-fry for 5 minutes over medium heat. Add more water if required.
Next, add the beef, beans and corn. Season to taste.
Add the broth and once it boils, lower the heat. Cover the pot and cook for 15 more minutes.
Remove from heat, serve hot and sprinkle with chopped parsley.
