Shell the corn and place in a pot filled with boiling water. Boil for 12 minutes, remove and drain.
Separately, heat a pot over medium-high heat. Meanwhile, cut the beef into small pieces and season with salt and pepper.
Once heated, pour half of the oil and add the beef.
Sear until browned on all sides, this will take approximately 4-5 minutes.
Meanwhile, chop the garlic together with the cauliflower and tomato.
Remove the beef, pour the remaining oil and add the garlic along with the cauliflower and tomato. Add a little salt and stir-fry for 5 minutes over medium heat.
Next, add the corn along with the beef, mix well and cover. Let it cook for 2 more minutes.
Serve hot.
