Wash, peel and cut the sweet potato into sticks.
Boil the sweet potato in a pot for 8-10 minutes until tender. Drain.
Heat a big pan over high heat. In the meantime, add salt and pepper to the beef.
Once heated, pour half the oil, add the beef in a side and the sweet potato sticks in the other.
Cook each side of the beef for 3-4 minutes until cooked as desired. For the sweet potato, cook each side for 2 minutes until browned.
Put the spinach leaves on a plate, season with the remaining oil and, if you want, add lemon juice/vinegar and a pinch of stevia.
