Peel and cut the potato into fries. Spray half the oil over them.
Cook in the oven or air fryer for 15-20 minutes at 356 °F (180 °C). Once crispy, remove.
Place a pan over medium-high heat. Once heated, add half the oil, spread and add the ground beef.
Salt and pepper to taste, stir and cook for 8-10 minutes. Continue stirring to avoid sticking. Once browned, remove from heat.
Separately, shred the lettuce.
For the dressing, mix the Greek yogurt, lemon juice, mustard and salt and pepper to taste. Optional: Add a pinch of garlic powder, paprika and onion powder.
In a bowl place the lettuce, fries, onion and tomato.
Top with the ground beef and the dressing.
