Chicken, Potato, Lettuce and Tomato Salad with Avocado Dressing

Ingredients

• Chicken Breast150 g
• Lettuce1 cup (35 g)
• Tomato1/2 count (65 g)
• Avocado1/4 count (60 g)
• Lemon Juice1 tablespoon (15 g)
• Yogurt1/4 cup (60 g)
• Potato1/2 medium (90 g)
• Oil1 teaspoon (5 ml)

Instructions

   Step 1

   Place the diced potatoes in boiling water for 10-12 minutes or until soft.

   Heat the oil in a pan over medium-high heat.

   In the meantime, salt and pepper the chicken.

   Once heated, sear each side for 4-5 minutes. Set aside and cut into small pieces.

   For the avocado dressing, mix the yogurt, mashed avocado and lemon juice. Salt and pepper to taste.

   Shred the lettuce and cut the tomato into pieces.

   Serve all the ingredients in a salad bowl and top with the avocado dressing.
