Instructions
Preheat a pan over medium-high heat. Add salt and pepper to the chicken.
Once heated, add half of the oil, spread and add the chicken. Cook for 4-6 minutes per side.
Once done, remove and cut the chicken into strips. Set aside
Meanwhile, peel and grate the carrot. Slice the olives.
Cut the tomato, bell pepper and cucumber for the salad.
Place the chicken, tomato, bell pepper, cucumber, carrot and olives on a plate. You can add lettuce and/or parsley.
Dress with the remaining oil, lemon juice, salt and pepper to taste. Serve.
