For this recipe you need cooked rice.
Peel and dice the carrot.
Place the carrot and peas in a pot of boiling water and boil for 6 minutes. Drain and set aside.
Separately, place a pot over medium heat. While heating, dice the chicken and season with salt and pepper.
Once heated, pour half of the oil and add the chicken.
Sear the chicken meat on all sides over high heat until browned. This will take approximately 2-3 minutes. Remove and set aside.
Meanwhile, mince the garlic and chop the mushrooms.
In the same pot add the rest of the oil and the mushrooms with the garlic. Stir-fry for 5 minutes.
Then add the broth and cook over low heat for 8-10 minutes.
Next, add the cream. Season with nutmeg and salt and pepper to taste.
You can blend so that the mushroom sauce is well mixed.
Add the chicken, carrots and peas to the pot with the sauce. Cook covered for about 5 minutes.
Serve the chicken stew with cream of mushroom soup and rice on a plate.
