Chicken with Mashed Potato, Pumpkin and Tomato with Avocado Salad

Ingredients

• Chicken Breast200 g
• Pumpkin1/2 cup (80 g)
• Potato1/2 medium (90 g)
• Butter1/2 tablespoon (15 g)
• Milk2 tablespoon (30 ml)
• Lettuce1 cup (35 g)
• Tomato1/2 count (65 g)
• Avocado1/4 count (60 g)
• Lemon Juice1 tablespoon (15 g)
• Oil1/2 tablespoon (5 ml)

Instructions

   Step 1

   Peel and dice the pumpkin together with the potato. Boil for 10-12 minutes.

   At the same time, heat the oil in a pan over medium-high heat. Add salt and pepper to the chicken.

   Once heated, add the chicken to the pan and cook for 4-6 minutes per side. Remove from heat when well done.

   Separately, place the cooked pumpkin and potato in a bowl and mash to the desired consistency.

   Mix with the butter, milk, salt and pepper.

   To make the salad, peel the avocado and cut together with the tomato. Add the lettuce leaves.
