For this recipe you need cooked quinoa.
Place the grill over medium-high heat. While heating, season the chicken breast with salt and pepper.
Once heated, add half of the oil, spread and add the chicken.
Cook for 3 to 4 minutes per side. Remove when desired doneness is reached and cut into slices. Set aside.
Separately, peel and dice the carrot. Cut the broccoli into small florets.
Boil the carrot in a pot with boiling water and add a pinch of salt.
After 3 minutes, add the broccoli and continue cooking for 3 more minutes or until the vegetables are tender. Remove and drain.
Chop the red bell pepper with the broccoli and mix with the previously cooked carrot and quinoa.
Season with the remaining olive oil and salt and pepper to taste. Optional: Add a few drops of vinegar or lemon juice.
Serve the chicken with quinoa and broccoli salad.
