Once the water comes to a boil, add the potato. Let it boil for 8-10 minutes until soft but not falling apart.
Separately, heat half of the oil in a pan over medium-high heat. While heating, season the chicken breast with salt and pepper.
Once heated, add to the pan and cook for 4-6 minutes per side. Remove when desired doneness is reached and set aside.
Place a pan over high heat. Meanwhile, beat the egg whites and season with salt and pepper.
Add the remaining oil and spread. Lower to medium heat and add the potatoes along with the egg.
Season with garlic paste or powder, paprika, salt and pepper.
After 30 seconds, start stirring using a spatula constantly until set. This will take between 3 and 5 minutes. Set aside.
Serve the chicken with the scrambled eggs and potato.
