For this recipe you need cooked rice.
Heat the oil in a pot over high heat. Cut the chicken into bite-size pieces and season with salt and pepper.
Once heated, add the chicken and brown on both sides. This will take 3-4 minutes.
Meanwhile, chop the garlic with the onion. Peel the potato and carrot. Cut into not very large slices.

Boil for about 10-12 minutes until the vegetables are tender.

Then turn off the heat and add the curry. Mix well.
Add the curry paste to the pot when the vegetables are tender.
Simmer for 1 or 2 minutes and remove from heat.
Serve hot with rice. Optional: You can add a pinch of soy sauce.
