Instructions
Make a cross cut at the top of the tomato of only a finger deep.
Put the tomato in a pot with boiling water and let boil for 5 minutes. Next, remove, drain and blend the tomato.
Add salt and pepper to taste and cut the pork into medium pieces. In the meantime, heat half the oil in a pot over high heat.
Once heated, add the pork and brown all its sides for about 5 minutes. Remove and set aside.
In the meantime, chop the onion and dice the carrot.
Peel and cut the potato into medium pieces, trying to make it even.
Add the remaining oil to the pot and then the carrot with the onion. Stir-fry for 5 minutes.
Next, add the potato, oregano and bay leaf and cover with the blended tomato. Add salt and pepper to taste. If necessary, add some water.
Once boiling, lower a bit the heat and cook for 10-12 minutes until the potato is softened but not mushy.
Remove and let sit for some minutes and serve hot.
Optional: If you have more time, you can cook the stew over low heat for more time for better taste.
