For this recipe you need cooked white rice.
Dice the onion, tomato and bell pepper. Chop the garlic.
In a large pan over medium heat, heat the annatto oil. Once heated, add the vegetables.
Stir-fry for about 7 minutes.
Add the coconut milk and cook for 10 minutes over low heat.
Meanwhile, clean the fish and fillet.
Add the fish, parsley and chopped cilantro. Season with salt and pepper and, if you have cumin, add to taste.
Cook for 8 minutes depending on the thickness of the fillet.
Once done, remove from heat and serve the fish in the coconut sauce with white rice.
