Instructions
For this recipe you don't necessarily need BBQ sauce. You can replace it with spices of your choice (paprika, sage, rosemary, etc.) with 1 teaspoon of ketchup and mustard.
Peel and dice the potato. Boil for 10-12 minutes or until softened.
Simultaneously, place the peas in a pot of boiling water and boil for 6 minutes. Once done, remove, drain and set aside.
While heating the pan over medium-high heat, season the pork with salt and pepper.
Once heated, pour in the oil and add the beef. Brown on all sides for approximately 4-6 minutes per side. Set aside.
Brush the pork with the BBQ sauce or spice mix. Cover and cook over low heat.
Once the potatoes are softened, remove, drain and mash. Add milk, butter, salt and pepper to taste and mix.
In a plate serve the glazed pork with mashed potatoes and peas. You can sprinkle with a little chopped parsley.
