Wash the baby squid and remove the skin. Discard the innards, separate the head from the rest of the body and pat dry with paper towels.
Finely chop the garlic and parsley. Mix together with the wine and 2/3 of the olive oil.
Heat a griddle pan with the remaining oil. Once heated, add the baby squid and brown for 2 minutes per side.
Before removing from the griddle pan, add the garlic and parsley dressing. Mix and continue cooking for 30 seconds.
Serve hot with lemon slices.
