Cut the broccoli and cauliflower into small florets and the carrot into slices. Bring a pot to boil.
Once boiling, add the carrots and boil for 6 minutes.
When 3 minutes are left, add the broccoli and cauliflower.
Once the cooking time is over, all the vegetables should be tender. Remove and drain.
Place a griddle pan over medium-high heat. While heating, season the fish with salt and pepper.
Once heated, pour half of the oil, spread and add the fish.
Cook for 2 minutes over medium heat to brown. Then lower the heat, cover and continue cooking for 6-8 more minutes until desired doneness.
Serve the salmon with the vegetables on a plate. Season the vegetables with the remaining oil, lemon juice, salt and pepper.
