Instructions
Place a pot filled with water over high heat. While boiling, peel and dice the pumpkin and carrot.
Once the water comes to a boil, add the vegetables. Let boil for 12 minutes.
Place the grill over high heat. While heating, season the beef piece with salt and pepper. Preferably use a lean cut.
Once heated, add 1/3 of the oil, spread and add the beef. Cook for 3 to 4 minutes per side. The time will depend on the thickness of the piece.
Once the carrot and pumpkin are softened, remove and drain. Mash, mix with another 1/3 of the oil and season to taste.
If you wish, you can add a pinch of paprika powder, turmeric and garlic.
Serve the beef with mashed pumpkin and carrot on a plate. Add the fresh lettuce on the side. Season the lettuce with the remaining oil, lemon juice, salt and pepper.
