While placing water to boil in a pot, peel and cut the potatoes in medium pieces trying to have more or less the same thickness.
Once boiling, add the potatoes and boil for about 10 minutes. Remove and drain.
Meanwhile, cut the onion into strips and heat half of the oil in a pan over medium heat.
Once heated, add the onion and stir-fry for about 5 minutes.
Add the sugar and stir constantly.
Add the potatoes and add the cornstarch dissolved in a little water or broth.
Cook for a few minutes until the liquid is reduced. Remove from the heat and season with salt and pepper.
Separately, preheat the griddle pan over medium-high heat. While heating, season the beef with salt and pepper.
Once heated, add the rest of the oil, spread and add the beef. Cook for 4 to 5 minutes per side (the time will depend on the thickness of the piece).
Serve the beef with the onion potatoes on a plate. You can serve with fresh salad on the side.
