Heat water in a pot over high heat. In the meantime, peel and dice the potato.
Once boiling, add the potatoes. Let boil for 10 minutes or until soft without falling apart. Remove, drain and set aside.

In the same pot, 6 minutes before removing, add the green beans. Previously cut off the ends.

Cook each side for 4-5 minutes, depending on how thick the piece is.
Chop the parsley (you can replace it with dill or any other herbs) and mix with the remaining oil.
